The restaurant officially opened its doors on December 4th, immediately drawing interest from local residents eager to sample its expansive menu and rich culinary heritage.

 

Guero Mex Grill is more than just another dining option—its story is rooted in tradition. The restaurant’s origins trace back to the founder known as El Guero, a native of San Felipe Chilarillo in Guanajuato, Mexico. His journey with food began decades ago when he taught himself the craft of making carnitas in the town of La Piedad, Michoacán. What began as personal curiosity grew into a small hometown business, and eventually, after relocating to California in the ’90s, the family built a reputation for serving some of the best carnitas in the Coachella Valley.

 

Now, that same legacy of flavor has made its way to Grayson.

During our visit, we sampled the Chimichanga, a standout item on the menu—and it delivered. Crispy on the outside and generously filled, the chimichanga was packed with savory flavor. The accompanying rice and beans were equally impressive— well-seasoned, comforting, and clearly made with care. It's the kind of plate that reminds you why traditional Mexican cooking continues to be beloved across generations.

 

The restaurant also offers specialties like carnitas, carne a la Mexicana, diablo plates, fajitas for one or two, and hearty lunch combinations. A number of dishes come from long-held family recipes, connecting diners directly to the culinary roots that shaped the Guero brand.
